The best Paris nightlife isn't on the Champs-Élysées — it's down a side street in the 11th, in a cellar in the 6th, or at a jam session that runs past 2am. After a lot of late nights we've learned the city rewards the wander: a glass of natural wine that turns into three, a smoked negroni in a candlelit vault, a brass band ten metres from your beer. This is our after-dark shortlist, leaning on neighbourhood bars and live-music rooms over flashy clubs, because that's where Paris is actually fun. Pace yourself.

Le H Bar is our platonic ideal of a Paris local — warm lighting, a good wine list, and the easy hum of a room full of regulars in the 11th. The barman has that rare gift of knowing when to chat and when to leave you to your thoughts, which is exactly what you want at the end of a long day. It's the kind of place you mean to have one glass at and somehow don't. Go for the atmosphere; stay because no one's rushing you out.

Up in the 20th on Place de la Réunion, Les Nouveaux Sauvages is the neighbourhood wine bar everyone wishes they lived above. It makes you feel comfortable almost embarrassingly fast — late on a weeknight it fills with locals who treat it like their living room. The wine flows, the room is warm, and the whole thing has zero pretension. We always end up lingering far longer than planned. This is off-the-tourist-map Paris at its most likeable.

Le 3Bis is a board-game bar in the 12th with a sense of humour — the décor riffs on a New York subway station, complete with tiled steps and signage, which is far more charming than it sounds. The point is to grab a drink, pull a game off the shelf and settle in for the evening with friends. It's relaxed, playful and a genuinely different night out from the usual bar crawl. Come as a group and claim a table early.

Occo is the night that escalates — it starts as tapas and cocktails and ends, somehow, as a club. The setting does a lot of the work: a candlelit stone-vaulted cellar in the 6th, all exposed rock, red light and velvet, that feels like a secret you stumbled into. The classic drinks are executed to a standard most bars never reach; the smoked negroni had us calling it the best stop of the trip. Go late, go thirsty.

Arbane Cocktail Bar

Arbane proves looks can deceive — there's not much to it from the street, but inside is a snug, cool little cocktail room in the 6th with a glittering bar and serious drinks. The move here is to hand back the menu and ask the bartenders to surprise you; they will, and it'll be excellent. It's intimate, well air-conditioned and exactly the kind of unflashy spot we love tipping people off about. A perfect first or last drink of the night.

Le Bal Blomet is where we send anyone who wants live music done right — a historic music hall in the 15th with a grand piano on stage and acoustics that put every instrument in its proper place. Stand at the barrier with a cold beer and a great band ten metres away and you've found the Paris music scene at its best. The room has real soul. Check who's playing, get there for the first set, and let the night unfold.

Bar & Beer Picpus is the unflashy neighbourhood find in the 12th that quietly over-delivers — a relaxed spot for a beer and an easy evening that punches above its postcode. We stumbled in not expecting much and couldn't stop talking about it for days afterward. There's no scene to dress for and no attitude at the door, just a good local bar doing its job well. Exactly the kind of place that makes you want to live in the arrondissement.

38Riv Jazz Club

38Riv Jazz Club, 4th Arrondissement

38Riv is a proper Paris jazz cellar in the Marais, the sort of institution that has the easy confidence of a place that knows exactly what it is. The late jam sessions are the draw — we came planning to catch one set and stayed for three, entirely the music's fault. The vaulted stone room puts you right on top of the players. Come down the stairs, order a drink, and don't make plans for after; the night tends to run long.
